Pickling Class By McClure’s

This one has been in the archives for a while. Back in August, a good friend emailed me and asked if I would be interested in taking a pickling class with her at Brooklyn Kitchen. Having been interesting in learning to making pickles and canning, I told her “definitely!” The class was taught by one of the founders of McClure’s Pickles – Bob McClure. He explained to us that different vegetables take different amounts of time in the pickling process. We were doing the basic pickle – cucumbers. But, we spiced it up a bit by using dill, garlic and red pepper flakes.

Bob explained that the best pickling cucumbers are kirbies or smaller cucumbers that are more tender and don’t have such a thick outer skin.

He then started measuring out the ingredients needed. It’s important to note that non-reactive pots are the way to go, along with making sure that if you’re going to use garlic in your pickling, it’s a good idea to boil them in the brine solution so that they don’t turn blue in the jar. It’s also important to make sure everything has been sanitized. The jars and lids have to be dipped in the boiling water you’ll be using for canning for about 90 seconds to ensure this.

Dr. Awesome was really enjoying them. The fruits of my labor. They were dilly, garlicky and very spicy.

Jill and I definitely agreed that this class helped take away our pickling fears that we would kill someone by accident. She’s been more proactive than I have in her picking and canning ventures and has had much success! I now need to take the plunge and start my preserving adventures. I’m very excited to start doing it. She sent me a website that has tons of information about any pickling/canning needs: http://www.uga.edu/nchfp/. Definitely worth checking out since there are a ton of recipes! Dr. Awesome’s mom also makes some mean jams.

I hope everyone out there had a great Thanksgiving! We had a hertiage turkey this year and it was the best turkey I’ve ever eaten. That post will be coming soon (and I promise not a month and a half later).

The Texas Chronicles Part Deux – Austin

So, where was I? Ah yes! After our trip to San Antonio, we made our way to our final destination on our short trip to Texas – Austin. My brother took us onto his military base which is Fort Hood. The street names were very interesting…and very Army.

This fort goes on for as far as the eye can see. Everything was really brown, even the tanks, etc. It was definitely interesting to see. My brother had to go to a certain place on the fort early the next morning, so we were just doing a drive through to see how long it would take. It was definitely an educational and eye-opening experience.

Afterwards, we made our way to the city of Austin. I took a photo of these crazy huge structures. The highways here are so huge. Never seen anything like it. Plus they have to throw the Lone Star in there, of course.

The first lot of these photos are from the car. We traveled down some of the main strips to get an idea of what was going on. Saw some pretty cool/funky stuff. Main reason we drove around first is because, well, it was about 108 degrees.

We were going to go in, but my brother had some sort of Swiss Army Knife thing with him, so that was bust. We then made our way back to the car and drove to the cute strip we saw.

This was what I had. I deserved it. Want to know why? It was 108 degrees outside. The way they made the cups was like Cold Stone: mash all the good stuff into the ice cream on a cold block.

So, what did I think of Austin? It was ok. We did go on a Sunday afternoon, so it was basically dead. I’ll have to go back into the city when my brother gets home from the Middle East and hit up 6th street.

And then, it was time for dinner. My brother took us to this awesome Tex-Mex place called Chuy’s. Now, from my experience at this place, I can honestly say that everything is really bigger and SPICIER in Texas.

HUGE plate of food. I forget what mine was called, but it had Elvis’s name in there. My chicken was coated in Lays Potato Chips. Yeah. It was awesome. Don’t judge me.

And so, that concludes my time in Texas. When my brother gets back, I hope to get a better feel for Austin. There is much music and drinking to be had!

Ice Cream…Big and Gay!

Last week, while it was a bajillion degrees out, I caught on my twitter feed that the Big Gay Ice Cream truck was going to be in the hood! I had to check it out before their store opened this past Saturday. Luckily the line wasn’t so bad (usually, there’s a ton of people). I decided to order The Salty Pimp.

As you can see, this bad boy was made up of vanilla ice cream (I should add that this was VERY creamy…awesome), Dulce de Leche that was tubed right into the ice cream, along with sea salt and then dipped into chocolate dip. Definitely worth the extra calories on that very hot day. The one item I really want to try out at the store is their chocolate ice cream sandwich that has bacon marmalade on it! Another concoction of note is their vanilla cone that’s dipped in crushed wasabi peas.

Sorry it’s been so quiet as of late. Posts on Austin and my pickling adventure are coming up next!  I also found a great resource through work about eco-friendly ways to dye your hair. Hmmm.

Farmers Market Inspiration – Heirloom Tomato Salad

Dr. Awesome and I had a great heirloom tomato salad at Rye the other night, so we decided to recreate the amazing experience. We went to the Tompkins Square Park Farmers Market and got some awesome heirloom tomatoes (finally!), small watermelon and basil. I also picked up some barrel-aged feta from Whole Foods. Drizzle a little bit of balsamic vinegar with some salt and pepper and BAM – Awesome.
