Pork chop stir fry…oh my oh my!
Hello there! Pork week seems to be coming along nicely, don’t you think? Anyways, tonight we decided to make some stir fry from some pork loin chops we got at Whole Foods a couple of days ago. All I have to say is DELICIOUS! The first thing we did was boil some ramen noodles and let them cool. Those got thrown in later.
Then, we cut up some garlic and ginger (and had some yummy shiitake mushrooms too!)

We sautéed the garlic and ginger for a while in some canola oil. Then we then cut up some bok choi, sugar snap peas and large spring onions, along with the shiitake mushrooms.
Then, we unwrapped the main ingredient: PORK!

We cut the pork chops up into 1/2 inch cubes and thew them into the mix. They got nice and happy and brown. Then, we threw in some awesome soy sauce, sesame oil, pepper and crushed red pepper and let it get nice and yummy.
The noodles were then added and mixed in.
And then voila! The final, delicious product:
This was so quick and easy to make. It’s definitely one of those one-pot dishes that are going into the rotation. There was a lot of liquid at the bottom of the pot (we probably should’ve used a wok), but the noodles absorbed all that and the flavor and it just melded together so well. I’m excited to keep working on it and get it perfect. Not bad for the first try with a little improvisation. Shiitakes are a definite in this dish. They add this woody depth of flavor that is just so ridiculously good.
I’m heading up to the Berkshires this weekend, so I apologize if there’s a little lapse in the entries. Unfortunately, it’s not going to be a happy visit because we’re putting one of our dogs to sleep after 12 loving and amazing years with her.
