At-home cooking…partially supported by Flying Pigs Farm and Fleisher’s

Dr. Awesome and I have been trying to be good and cook at home more along with using up leftovers.  A couple of weeks ago, we went to his parents house where his mom cooked an amazing dinner with pork loin that Dr. Awesome got her for Christmas from Flying Pigs Farm.  You might frequently see these guys are the Union Square Market. I went one summer afternoon after getting out of work early and scored some of their awesome pork belly.  More to come on that later.  The pork loin came with a really simple recipe of just making an herb rub with some oil.  How much simpler can you get?

Yeah, I know you’re jealous. Now, I’m sure you’re asking “But what’s so cool about Flying Pigs Farm?” Well, I’ll tell you. They’re a family-run farm located in upstate New York and breed rare heritage breed pigs, as well as chickens and eggs. They’re a local place that makes sure their animals are well taken care of and produce a really high-quality product. Getting back to their pork belly. Every time Dr. Awesome and I have gone to the Market during the late afternoon on a Saturday, they’re all sold out. I ventured there after work one Friday and asked if they had any left, and they did! I put it away in the freezer, along with another piece of pork belly from an Amish farm that a friend of mine was able to get me. Feeling adventurous, Dr. Awesome and I decided it was time to finally cook the beasts. Now, as you have probably read before on this blog in the past, we’ve failed about two or three times cooking pork belly (one time was because the piece we had was more fat than meat). We used a recipe by Tom Colicchio that was recommended on their site. We were scared, but the end result came out perfectly! Finally! In keeping with the theme, we also cooked a bunch of pancetta with brussel sprouts.

Put the pieces back in and filled the pan with chicken stock and stopped just before it reached the top so that the skin gets crispy.

All the failure was worth this one moment of delicious glory.

The next night, we had some friends over for dinner. We made chicken cutlets with polenta (no instant this time!) and baby spinach with garlic. We had a lot left over and figured we could fry up the leftover polenta (which we made with chicken stock…definitely recommend) and poach some eggs. I also thought to use the bacon we scored (during my BIG SCORE) from Fleisher’s at the New Amsterdam Market. This was only our second time poaching an egg, but it came out really well. It actually came out as a very well-composed brunch.

We bought some steaks from Whole Foods for dinner (yes, we ate very well that weekend). Dr. Awesome’s mom bought him a cruset grill pan for his birthday, so we wanted to try it out.

Yeah, we were totally on a roll with our cooking. We seared the outside of the meat on the grill pan for a couple of minutes and then threw it in the oven to finish off. It was so tender and juicy. Lovely!

Two nights ago, we wanted to have some polenta again, so we made some shrimp and grits.

Tonight, I’m cooking a chicken that my dad got from North Plain Farm up by him. In exchange for some whey, we get some great products, like his chickens and eggs or pork chops.

So glad we were able to eat a bunch of food where we knew where it originated and definitely had a good life. It’s a really nice feeling when you’re able to come up with creative ways to eat leftovers so that nothing goes to waste. I’m trying to be more conscious of that, especially when there are so many people in this world who would give anything for the amount of food we throw out.

Travelin’ to the Upper East and West Siiiiide

Now, living in the East Village, I have anything and everything I want right around the corner from me and it’s really easy to just stick around that area.  Luckily, I have friends that live all over the city, so it’s a good excuse to go around unfamiliar territory.  For example, our friends TumbleBart™ live in East Harlem and had been raving about this awesome soul food place about a 15 min walk away called MoBay. We met there with another couple for dinner.  I started out with a monster drink. I can’t remember the name of it, but it was something along the lines of “it’s called this because basically, you’ll need a cab to get home.” Edit: I was just made aware that this drink is actually called “Call me a Cab”. Figures 🙂

Once we ordered dinner, the most amazing appetizer/side dish followed shortly:

A corn muffin with PINEAPPLE BUTTER! Now, I’m not the biggest pineapple fan, but this was awesome.  The warm corn muffin with the chunks of fruit and slightly melted butter just worked in harmony. Dear Soul Food Gods, thank you for this amazing creation.  I was very satisfied already when our dinner finally arrived.  I had the ribs with plantains and mac and cheese.

Now, one half of TumbleBart™ recommended their potato salad, which, in a few moments, I will get to.  The other half told me that their plantains were so good. The ribs had a spicy sauce and even though my mouth was somewhat on fire, I couldn’t help but eat most of my fall off the bone meal. Dear Soul Food Rib Gods: YES YES YES!

A couple of days later (maybe a week later) TumbleBart™, myself and some other friends met up for brunch.  This time, I decided to change it up.  I got the jerk chicken sandwich with potato salad.

As what usually happens when I’m enjoying a meal, I remember halfway or almost the whole way through that I need to take a photo and document what’s going on.  Clearly, there was a fail this time. The Soul Food potato salad gods were smiling down on me, that’s why I forgot. I don’t know how they make it, but it was the best potato salad I’ve had.  The sandwich, even though in this picture, is almost gone, was a bit disappointing.  The chicken was spicy, but it tasted like they added the seasoning after cooking it, so it didn’t really develop the flavor in the meat.

A couple of weeks ago, I went with a bunch of scientists (cause sometimes you need to switch it up a bit) to a place called Covo Trattoria. It’s a great Italian place sort of located in the middle of nowhere. What’s great is that they can accommodate large parties, which we were and the food isn’t very expensive.  This place ended up being a total photo fail. I started with a special appetizer: squid ink ravioli stuffed with crab or lobster in a vodka sauce. Never had squid ink pasta before and figured it was a good time to try it. Really good and I totally recommend it to anyone. Like I said after I came back from Italy all spoiled, fresh pasta really makes a difference.

I was also told this place has great pizza, so I got one with prosciutto. Once again, excellent choice.

I’m so thankful that I have friends like TumbleBart™ who live in East Harlem and Dr. Awesome’s science posse that live on the Upper West Side to expose us to cuisine and places that I would never normally find or go to.

By the way, Food Tour Spring 2011 will be underway in March! A taste of what Brooklyn has to offer.

Dr. Awesome’s Offal Birthday

Dr. Awesome had quite the birthday weekend.  Back in the last week of December, I was thinking about what places Dr. Awesome had wanted to eat at, but were hard to get into.  One place that I know he had been dying to go to was Babbo. I called on December 28 around 10:30am.  By that time, I was only able to get a reservations at 6:30 or 8:30.  I decided to go for the 8:30 and was told to call 2 days before the reservation to confirm. Needless to say, Dr. Awesome was very very excited.

A month flew by (as per usual these days) and we made our way over to Greenwich Village. We were sat right away and I think in one of the better spots in the restaurant. We were near the kitchen in our own corner. They started us off with an amuse bouche of chickpeas. Please excuse the quality of the photos. We took these with a phone camera.

We also had some cocktails. I had a blood orange cosmo which was amazing and I’m not a huge mixed drink fan, while Dr. Awesome had some prosecco.

I started off with the marinated fresh sardines with caramelized fennel and lobster oil

Dr. Awesome had the pig foot “milanese” with rice beans and arugula. Because it was pounded out, the pig’s foot just melted in our mouths. I had an interesting experience with a pig’s foot in Switzerland which made me not very keen on trying it again, but this totally took what can be done with it to another level.

For our main dishes, I had the grilled venison with celeriac and cranberry mostarda. They brined the meat overnight, which I do have to say, made it a bit too salty. It was all delicious though.

Dr. Awesome had the fennel dusted sweetbreads with sweet and sour onions, duck bacon and membrillo vinaigrette. He was looking forward to having sweetbreads but with bacon lardons. Guess they changed the menu. It happens.

We also ordered a side of roasted brussel sprouts with pancetta. Always a good thing.

For dessert, we shared saffron panna cotta with grapefruit “tris”. This was more of a savory dessert. Usually I like saffron and panna cotta, but the combo together didn’t really work for me.

While paying the check, we were served some very delicious cookies as an extra treat.

I have to mention how amazing our waiter was.  We asked him what kind of wine he would recommend since we had different appetizers and entrees.  The red wine he suggested went well with both.  It was strong on the nose, but mild on the palate. It’s nice to see that the waiters know their stuff! (I would also hope so at a place like that.)

Now, Dr. Awesome’s birthday weekend just started. The next day, we met up with a bunch of friends and started out at Raine’s Law Room which is a speak easy, and they take it very seriously.  Only one party is let in at a time and you have to buzz for them to open the door.  Once inside, you’re transported back to the 1920s, sitting on couches with some period-themed wallpaper.  We had to pull a chord and a light lit up to get the waitress’s attention.  After a couple of strong drinks, we made our way to Rabbit in the Moon, which is basically right by Babbo.  Dr. Awesome had ready about it on Eater and it was getting good buzz.  The place had an interesting vibe/facade. Our appetizers were amazing.  I had their rabbit terrine and that could’ve been a meal in and of itself.  My main dish was the chicken, which was ok. Most people got the duck, which was great.

After stuffing our bellies, we went to Pegu Club to meet up with some other people and have a few after dinner cocktails.  Of course, I had to have my earl grey martini! Best drink ever.

So, another year, another grey hair for Dr. Awesome 🙂 But, at least he can’t complain about being hungry!

Killer Omelets

Wow, has it really been a month? Dang, I’m bad. I have two posts coming up soon. One about Dr. Awesome’s birthday (we went to a bunch of great places) and MoBay. But first, to hold you over, all my faithful minions, is an awesome website by done by a family friend of mine. It’s called Killer Omelets. Danny is like the omelet master. I need to try some of his recipes, cause they look sweet. Omelets are that one thing that I still have not perfected. Even my own brother, who doesn’t really cook much, made an amazing omelet for me. It made me feel all sad inside. Just kidding. Props to him. If you catch him outside his army gig, ask him to make you one with egg white, goat cheese and tomato. I don’t get how he gets it so fluffy! Challenge accepted young one.

A Trip Down South – Ye Olde Virginia

Dr. Awesome and I wanted to mix it up a bit for new years. We decided to go down and visit our great friends Frank and Caitlin in Richmond, Virginia. We touched down on the evening of December 30 and were hungry! Frank and Caitlin took us to this really cool place called The Bellytimber Tavern. I had a shrimp po’ boy which was sooooo good. It was also amazing to remember and experience that ordering drinks outside NYC is ridiculously cheap. Like, $26 for 5 people cheap. And there were some hardcore drinks too.

We then made our way to McCormack’s Whisky Grill & Smokehouse. We were brought upon an amazing sight:

No, not the ghostly person in the front. It’s hard to see cause it was very dark and my flash mainly caught Dr. Awesome. There was a huge, huge wall of mainly bottles of whiskey. It was amazing. There were so many bottles that the bartenders had to climb a ladder to reach things at the top or towards the very back.

On New Years Eve, Frank came up with the idea to roam around his and Dr. Awesome’s old stomping grounds of Charlottesville and visit some local wineries. Yes. Wine. Virginia makes wine. I didn’t know this until about a year ago. We started at Thomas Jefferson Vineyards. We sampled all their wines. Unfortunately, their pours were a little light. Like automated pourer light. We ended up taking one of their white wines called Viognier which, according to their description, has aromas of honeysuckle and apricot.

We then made our way to Blenheim Vineyards which is owned by none other than Mr. Dave Matthews. I have to say, his space is pretty friggen cool.

They were really cool there. The guy giving us the tastings free poured the wine and gave us yummy crackers to snack on. Then, this description of one of their reds caught my eye:

So enticing, one could date this wine!! Have you ever seen something like that before? I have not. And it was awesome. Unfortunately there were no cool wine names like “Ants Marching Merlot” and “Crash Into Me Chardonnay”. I was sad about that.

We ended with a nice group shot. Dr. Awesome and I bought Dave’s Painted Red wine which is 41% Merlot, 36% Cabernet Franc, 17% Cabernet Sauvignon, 6% Petit Verdot and has fresh scents of violet, blueberry, and cinnamon lead to lush flavors of blackberry jam, anise with soft tannins on the finish. Sure…violet.

Dr. Awesome and Frank took us on a quick tour of UVA which is really nice. Especially since all these secret societies leave their marks on the buildings there. So mysterious!

Before the drinking festivities, we made ourselves a home cooked meal of chicken coconut curry.

Frank made a great batch of Sazeracs. This drink literally changed my life. It’s delicious and you don’t need to drink too much of it to feel it working its magic. Caitlin gave us a black eyed pea to eat for good luck in the new year. Apparently it’s a southern tradition.

Many hijinks ensued. We made our way drunkenly to a bar to bring in the new year. We made it with about 5 minutes to spare. We all decided to just chill in the middle (the place had a front room and back room) and the front room counted down and celebrated about a minute before the back half of the room. I was confused, but I was drunk so it didn’t really matter.

The next day, we took it easy. Frank and Caitlin made us amazing eggs with bacon and cheese grits. I never really had grits before. I’m fan. They were delicious! We drove about an hour out of Richmond to visit one of Dr. Awesome’s friends from grad school who now works on his family’s dairy farm! How cool is that? We came right at feeding time and got to see some cute, young cows.

The cows kept following John’s son Tom around while he was running. It was really funny.

We got to hang with John and his family for a bit. His wife Amy is an amazing cook. She had some olive oil cake, bread, a black eye pea dish and artichoke dip. It was all so, so good. We also got to see our friend Molly and her boyfriend Andrew which was really nice.

After a couple of hours, we drove back to Richmond, pondering what to do for dinner. After a couple of disappointments (places either not being open or them having a special New Years Day menu), we went to a place called Buz and Ned’s Barbecue. Oh man, this place was awesome. We had their pulled pork (and buns for sandwiches!), hush puppies, mac and cheese and collard greens. How could this evening get any better? “Two Fat Ladies” marathon on Cooking Channel. That was our night. It was the best ever.

Dr. Awesome and I left the next day, but not without some good brunch. Frank and Caitlin took us to The Black Sheep (along with Buz and Ned’s, was apparently featured in a Richmond episode of “Man vs Food”). I had the grillades and grits, which is thinly pounded pork with a spicy tomato sauce that had grits underneath.

We were really sad that our amazing New Year’s weekend had come to an end, but we were so happy that we made the trip down in the first place. Thanks guys for a great weekend and I really hope that we can do it again in the near future!
